Our mission on board The Rolling Fork food truck is to provide our guests with delicious and creative dishes inspired by products available here in The Roaring Fork Valley. We partner with local farmers located outside of Silt and Palisade Colorado which enables us to offer our “Farm to Truck” concept. We believe that supporting local farms will help to keep your money right here in Colorado instead of going to the giant corporations that dictate the market. Because of our unique partnerships we constantly change our menu depending on what produce & proteins are fresh and readily available throughout the year. This enables us to keep things fresh &  fun each and every time you come to visit. We also pride ourselves on creating menus for special event needs such as weddings, birthdays,
anniversaries or block parties! We like to ask “What does food mean to you”? If you have a favorite dish or something you’ve wanted to serve your friends and family, let us know! We love putting a “Food truck twist” on your favorite foods.

Hey Hey! 

I am happy to say that my dreams have been realized.  Owning and operating multiple food trucks with my family is an absolute blast.  Being creative through food has been an outlet in my life and great things have come from it.  When I am not cooking for work, I’m usually cooking for fun!  I enjoy taking rides on the RZR, spending time with my son Jettson and exploring every possible inch of our beautiful state of Colorado.  I want to personally thank you for taking the time to read this and know that when you book with The Rolling Fork – you not only get the best food this side of the Rockies, you get all that my goofy, fun, loving family has to offer!

Pastry Chef & Owner Meagan Shockley

Hey there!

Opening this business with my husband back in 2020 was the scariest endeavor I could have imagined for our lives at the time. Pandemic, newborn baby, and a food truck? Talk about a head rush. I fell into my roll with baking and sweets rather…abruptly. When we first started, I couldn’t even bake a chocolate chip cookie correctly. But the passion was there and I learned quickly, mastering basic baking techniques and skillsets. Today, I am proud to call myself the pastry chef at The Rolling Fork. From extravagant cakes to, yes, chocolate chip cookies, I’ve got your sweet tooth covered on this side of the Rockies!

Sous Chef Jake Shockley AKA “Uncle Jobe”

Howdy! 

My name is Jake Shockley – but all my friends call me Jobe!  I am the younger brother of Aaron Shockley – the owner of The Rolling Fork.  You may get us confused, so don’t be surprised when I yell “I am not Aaron!  Throughout my life I’ve had a tough time figuring out what I am passionate about.  I’ve found that my creative ability through music can also be shared through food!  I love to play the guitar, recording music and spending time outdoors.  My new found passion for new age food styles definitely makes for a happy wife as well as happy customers!

Hi There! 

My name is Colton.  I absolutely love working on the food trucks and learning something new about food every day!  I am glad I can do what I love with amazing people, for amazing people!  In my free time I enjoy a good day up in the mountains either snowboarding or camping.  When I am not cooking or exploring you can find me where the music is!

February 2017 - An idea is born

After moving to The Roaring Fork Valley my wife and I discovered that one thing was missing from this seemingly perfect paradise: food trucks!  At a downtown bar over cheap beers and a game of pool a concept was born.  The Rolling Fork – Farm to Truck.

APRIL 2020 - DREAMS BECOME REALITY

After staying home for months – due in part to the pandemic – but also welcoming our first born son to the world – the purchase was made and the journey began.  Our brand new food truck was finally home and endless possibilities now await.

JUNE 2020 - READY TO ROLL

The logos applied, social media created and nothing but open road and creativity ahead of us – the truck is operating!  A scary, but exciting reality that our dreams have come true.  We are so excited to supply this valley with our unique farm to truck concept!  Will you join us in our adventure?

March 2021 - Award Winners
This is hands down one of the greatest accomplishments of our lives. We received not one, but TWO awards within our first year of operation for the best catering AND food truck in the valley!

We are absolutely thrilled to announce that we won first place in two categories for this year’s locals choice awards! First place in the “Best Food Truck” category and first place in “Best Catering” category! Thank you all for your unwavering support and love!

We have been highlighted in two different magazine articles through Denver Voyage Magazine! We had so much fun telling our story and hope to continue to be an inspiration for those who want to start their own business!

After 50+ weddings in 2022, we are already looking forward to our 2023 season! Bookings have started earlier than ever and we are beyond thrilled at the positive feedback we were given throughout this year’s busy wedding season. We look forward to serving you all in 2023!
