Although we are most known for having our rotating menu, there will always be our signature dishes that are staples to us and (we hope to be) staples in our community. Explore our signature Menu below or book us to cater an event with a custom menu.

We believe that supporting local farms will help to keep your money right here in Colorado instead of going to the giant corporations that dictate the market. Because of our unique partnerships we constantly change our menu depending on what produce & proteins are fresh and readily available throughout the year. This enables us to keep things fresh & fun each and every time you come to visit.

Signature Dishes

Our signature dishes have found themselves on wedding menus across the western slope of Colorado since 2020.  A fun and unique twist that puts the traditional wedding buffet to shame.

Ahi Tuna Steak | 🌱

Sushi grade Ahi tuna crusted with black sesame seeds and seared on the grill.  Sliced and served on a bed on Thai chili slaw with uncle Jobe’s Yummy sauce, green onions & black sesame seeds. Served in a bowl, or in taco shells.
Can be made vegan / vegetarian.

Asian Fusion Taco | 🌱

Beef Tenderloin cooked to a perfect medium rare, served on a bed of purple slaw and topped with green onion, black sesame seeds and a drizzle of uncle Jobe’s yummy sauce.
Can be made vegan / vegetarian.

Big Boy BBQ Grilled Cheese

Melt in your mouth slow roasted BBQ pork shoulder, melty American cheese, pickles, and BBQ sauce on our classic garlic butter Texas toast.

Brisket Grilled Cheese

A crowd favorite, our slow smoked brisket sliced thin and piled high with melty cheese, dill pickles and packed between thick cut Texas toast smothered in our top-secret butter sauce.

Golden Beet Salad

Roasted Golden Beets served on a bed of spring mix, tossed with candied pecans, thinly sliced red onion, crumbled Goat cheese and Raspberry Vinaigrette.

Elk Burger | 🌱

Locally sourced Elk seasoned and charbroiled to a perfect medium.  Served on a toasted bun with blistered jalapeño, caramelized onions & Apricot preserves.  Can also be served as sliders!
Can be made vegan / vegetarian.

PITT Steak

Pittsburgh Style Cheese Steak.
Slow roasted chuck steak, tri colored bell peppers, cheese sauce on a toasted hoagie roll.

Rockfish Taco | 🌱

Delicate rockfish blackened and pan seared topped with our delicious watermelon salsa, Pineapple Jalapeno Crema and served on corn or flour tortillas.
Can be made vegan / vegetarian.

Crispy Chicken Wings

A full pound of crispy fried chicken wings tossed in our ALMOST famous Shock Sauce! Served with celery, carrots and lots of napkins!

Carne Asada | 🌱

These tacos will take you directly to Central America. Our take on a traditional marinaded skirt steak cooked over an open flame, served with blistered jalapeño, black bean corn salsa, cilantro lime crema and served on a corn or flour tortilla.

Mama's Pulled Pork Tacos

A secret family recipe – slow roasted pork shoulder with southern style slaw, pickled red onions and sweet – heat BBQ sauce on locally made corn tortillas.

Almost Famous Fried Chicken Sammy

Hand breaded chicken breast, fried to perfection and tossed in our signature Shock Sauce with lettuce, tomato on a toasted bun – it’s ALMOST famous! Can also be served as sliders! 

Bang Bang Shrimp Tacos

Grilled Pink Gulf shrimp served on a bed of Thai chili slaw, topped with house bang bang sauce, green onions & black sesame seeds.

Colorado Hot Chicken Sammy

Pur twist on Nashville Hot chicken! Fried to perfection and tossed in hot chili oil with our secret blend of spicy seasoning. Served on a toasted bun with southern style slaw and sweet pickles.

Birria Tacos

Traditional Beef Birria tacos served with cilantro, onion, lime and a cup of that delicious broth for dipping.

Vegetarian, Vegan & Gluten Free 🌱

We can make almost all of our options Vegetarian, Vegan or Gluten Free using products like IMPOSSIBLE beef, Tofu and Gluten Free Bread.

If you’re looking for a more traditional option for your special event or wedding, try one of our – not so traditional – plated options.

Local Beef

Choose your favorite cut of beef and pair it with some of our hearty & healthy side dishes. Try it topped with rosemary brown butter!

Free Range Chicken

Try our Chicken Caprese! Garlic and herb marinated chicken breast, grilled and topped with fresh mozzarella, heirloom tomato, red onion and fresh basil topped with a light balsamic drizzle.

Pork Tenderloin

Melt in your mouth pork tenderloin, sliced and grilled to perfection. Inquire about a variety of marinades and toppings to pair!

We also pride ourselves on creating menus for special event needs such as weddings, birthdays, anniversaries or block parties! We like to ask “What does food mean to you”? If you have a favorite dish or something you’ve wanted to serve your friends and family, let us know! We love putting a “Food truck twist” on your favorite foods.
